Today we will make Chole Bhature
Chole Bhature is a famous dish of Punjab and is the street food of Delhi.
It is really tasty and it is liked by everyone.
It is easy to prepare Chole Bhature at home.
So let's see what all ingredients are required to prepare chole Bhature.
- First we will prepare the dough.
- All these ingredients are required to prepare the dough.
- Take plain flour/all purpose flour- 500 grams
- Save 50 grams maida and use the rest 4 cups of flour to prepare the dough.
- Oil - 2 tbsp
- Sugar - 1 tsp
- Baking soda - 1 tsp
- Salt - 1 tsp
We are using boiled chickpes.
Take 2 cups of chickpea, wash and soak it for 8-10 hours.
Again wash the chickpeas and put it in the cooker.
To the cooker add 2 tsp of salt,2 teabags, 3/4 tsp baking soda and 2 cups of water.
After a whistle from cooker, we'll cook the chickpeas. On ow flame for 5-6 minutes.
Take out the chickpeas from the cooker when all the pressure releases from it.
Now this is our boiled chickpeas.
- Now take tomatoes - 500 gms
- Ginger - 2 inch long
- Green chillies - 2-3
- Cottage chees - 200 grams
- Finely chopped green coriander - 3-4 tsp
- Yogurt - 4 tbsp
- Oil - 4 tbsp
- a pinch of asfoetida
- Cumin - 1 tsp
- Garam masala - 1 tsp
- Pomegranate seeds - 1.5 tsp
- Coriander powder- 2 tsp
- Red chilly powder - 1/2 tsp
If you like it spicy then you can add more chilly powder.
- Salt - 1 tsp or to taste
Make a well in the flour and add sugar, baking soda and salt
Mix all ingredients in the bowl. Now add 2 tbsp of oil.
Mix all the ingredients thoroughly.
Now with help of lukewarm water we will prepare the dough.
Pour a little bit of lukewarm water to the bowl and knead the dough.
The dough is ready and now pour a few drops of oil to the hands.
Now knead the dough for 5-6 minutes unitl it becomes smooth.
This is very important as the sugar that we've added to the flour must mix well so that we cannot feel it. The dough must be really smooth.
If the dough is not kneaded well, then the bhature will not be tasty enough.
So the firsth step is to prepare a soft and smooth dough.
Make sure that the dough is not really hard as well as not toothin.
We need to prepare the dough same as we prepare for chapatis and paranthas.
Smooth doughis finally ready.
The dough now feels really smooth and we cannot feel the presence of the sugar in the dough.
As we touch the dough it raises back to normal shape. Pat the dough with little bit of oil.
To prepare the dough we have used 1 cup of water. Cover the dough and keep it in a warm place for 2 hours.

The dough will rise then and then we will prepare the bhature. Meanwhile we can prepare the chole.
To prepare chole we need to prepare the spices. Slice the tomatoes into big pieces so that it can be ground easily in the mixer. Chop the green chilies into 1-2 piece
Peel the ginger and slice it into big pieces. Wash and dry the required vegetables in advance.
The rest of the ginger we will slice them into log pieces. Now we will grind the spices
Put all the sliced ingredients into jar and grind them finely.
Tomato masala is ready and now we will prepare the chole. Heat pan and pour oil.
To the oil add cumin, pomegranate seeds, asafoetida powder, coriander powder and saute all the spices.
Now we will add the tomato masala into the pan.
Saute the spices until oil separates and forms a layer.Stir the ingredients every 1-2 mins.
Cut the leftover 1 inch ginger into long pieces. Add ginger to the sauted ingredients.
Dice the cottage cheese into a size of 1 cm*1cm cubes. The oil has now started floating over the mixture. Sauted spice is finally ready. Now add 2 cups of water to the pan.
You can adjust the quantity of water according to your choice.
If you want a concentrated gravy then add less amount of water. Add if you want a tin gravy then you can add more amount of water. Add salt and red chilly powder.
Mix them and close it with a lid so that the gravy boils easily. To prepare a tasty chole we need to suate the spices nicely. It should neither be raw nor it should be over cooked.
So we need to saute the spices on low-medium flame by stirring it continuously
We need to give special attention while sauteing the spices.
The gravy has started boiling and now we will add the boiled chickpea.
Add garam masala and cottage cheese. Mix all ingredients.
If you want you can fry the cottage cheese
If the cottage chees is fresh then you don't need to fry and they will really tasty.
Add coriander leaves and cover it.
Cook unitl the spices blend well with chickpea and cottage cheese.
After 4 minutes the chola is finally ready.
Turn off the flame and transfer the chola to a bowl.
Garnish the chola with chopped coriander leaves.
The dough is finally risen after 2 hours and now we will prepare the bhature.
Apply dry flour on your palm and slightly press the dough.
Now we will prepare the dough balls.
Apply dry flour on your palms and roll small balls of dough.
Make a dough ball equivalent to the size of a small guava.
Roll the dough balls and keep it aside.
The dough balls are ready and now we will roll them using rolling pin.
Take a dough ball, bind with the flour and roll them into oval shape.
Bhatura dough is finally ready and place the oil on flame for frying.
To fry bhatura we required very hot oil.
Drop a small piece of dough onto the oil and check whether it gets fried or not.
The dough has now started floating on the surface of the oil that means oil is hot enough.
Now fry the bhatura in oil by slightly pressing it.
Flip the bhatura as soon as it swells up.
Fry the bhatura until it turns golden brown from both the sides.
Fry rest of the bhaturas likewise by slightly pressing them.
Flip the bhatura and fry until it turns golden brown.
We can prepare around 12-14 bhaturas
Tasty chole bhature is finally ready and it is really easy to prepare them.
From viewers I get comments that the bhatura isn ot soft and fluffy.
Now for this we need to be little careful.
While preparing the dough we need to knead it until it becomes smooth.
Then we need to keep the dough in a warm place for 2-2.5 hours
The dough will be fluffy and then gently press the dough with the hands.
Roll the dough balls using the dry flour.
Now we have to heat the oil for frying
With rolling pin roll the dough with the dry flour.
It is really easy to roll the dough using a rolling pin.
Now the most important thing is that the oil muct be hot enough for frying.
If you fry the bhatura in the oil then it will become fluffy instantly.
Then flip it and fry unil it turns golden brown.
If the oil is not hot enough then the bhatura will not be fluffy.
So keep this small tips in mind while preparing and tasty bhatura will be ready.
Chola can be prepared well easily and there is nothing that requires your minute attention.
